I adore the cheesy, creamy, nostalgic deliciousness of Mac & Cheese.
(But not the effects of the gluten. Or the dairy.)
(Or the nutrient takeaway of -2 on the vegetable scale, and a virtual 0 on the protein.)
Oh right…that is what makes macaroni and cheese, macaroni and cheese.
You know those trendy hipster food joints that include on their menu their signature “_______ Mac & Cheese” dish (insert any of the following adjectives: “ “upgraded”/ “ultimate” / “loaded” / “epicurean”/ “make-it-you”)? They are doing their best to entice us away from embracing a dairy & gluten free lifestyle.
Super tempting. So I just decided to give in… But I “make-it-me,” and, make it myself for a fraction of the cost!
AND…it’s. so. darn. good. I crave it on the regular. Way more tasty than most restaurants.
With Trader Joe’s brown rice pasta and Costco’s amazing goat cheese, and some rotisserie chicken for the all-essential-protein, it’s literally less than $2 a serving, and powers you up way more than any blue box ever did.
Plus…spinach. Gotta have those greens, right? It’s one of my go-to “Whole Box Spinach Archives” recipes! Super fancy, super easy, super nutritious.
