Pineapple Pico de Gallo

Fruity, fresh, and zesty. You just can’t go wrong.

It’s gluten free, dairy free (obvs), raw and AIP (minus the jalapeno ….with the lime oil and garlic you won’t miss it!)

I love this as an alternative to regular salsa, or as a topping on fish tacos.

The garlic, salt and pepper deliciously balance out the fruitiness of the pineapple, making this a-ddictive. (Be sure to use a microplane if you want to avoid raw chunks of garlic!)

(NOTE: Do not ingest just any essential oil! Most labels say for external use only, and even if they say “100% pure” or “organic”, it doesn’t necessarily mean anything since oils aren’t regulated. Pico Ingredients:

Dressing Ingredients:

  • 2 Tbsp lime juice (or, can sub vinegar if you're limeless, but still using the Lime oil)

  • 1 clove garlic, grated

  • 2 drops Lime Vitality oil

  • 1/4 tsp each salt & pepper

Chop the pico ingredients and combine in a bowl.  Whisk the dressing ingredients in a glass jar,  drizzle over pico, and serve!

(Tastes even better when you let it sit for an hour or more in the fridge. :)
