Easy Chicken Sausage Skillet
Sausage, greens, tomatoes, rice.
Spices, essential oils, and hot sauce.

You’ve got your protein (pre-cooked!), your veggies, a healthy grain....and lots of flavor. What more could you ask for?

But the best part is… no raw meat prep or cleanup! (Who else gets jazzed about that factor for a weeknight meal?) These chicken sausages from Costco are CHANGING my protein game. No nitrates, nitrites, preservatives or trans fats…and they’re totally delicious.

And, if you make your brown rice ahead of time, this recipe only takes about 15 minutes, start to finish!
A NOTE ON THE GREENS: I make this with any dark leafy green that’s on sale (kale, Swiss chard, mustard greens, or collard greens), PLUS 6 handfuls of our favorite superhero green: baby spinach!
Only got yo’ box-o-spinach? (No shame in that!) Then just add 4 extra handfuls! Cook that spinach down in the skillet by itself before adding your rice, so you’ve got plenty of room to sauté it. ;)
A NOTE ON THE SAUSAGE: I use this bag’s directions for simmering the sausages in water, so if you get a different kind of sausage, do whatever your package directs you to do.
A NOTE ON SMOKED PAPRIKA: This is an INCREDIBLE spice that adds such a smokey depth of flavor. It’s paprika that’s been… smoked. (Clearly.) Any time I’m making something that’s supposed to taste grilled/smoked/woodsy, I add this and marvel at the outcome! Look for it at slightly more upscale grocers like Hen House or Whole Foods, because it’s very different from regular paprika.
