Pumpkin Yogurt Parfait Bowls

On days where food preparation takes up the entire day, and the resulting meal is rich and heavy, I crave a simple, wholesome breakfast. One that is substantial enough to get me through all the laboring-of-love, but without the empty calories.

For a Thanksgiving-themed, simple and clean breakfast, here’s a combination I tried the other day and loved.

For your base:

1 cup of a “clean-eating” yogurt of your choice (whole milk, organic, etc. nothing overly sweet…I used goat yogurt!)

Swirl in:

3 Tbsp pumpkin puree, 1/8 tsp cinnamon and honey to taste

Top with:

  • Cranberries

  • Pumpkin Seeds

  • Walnuts

  • Sliced Apples

  • Granola

  • Dates

  • Figs

  • Pecans

  • Pears

  • or any other fall-ish toppings you like.
